Exploring the Traditional Cuisines of Oaxaca
The high fertile tropical valleys of Oaxaca nurtured isolated cultures and supplied them with an abundance and variety of culinary ingredients. Developed and preserved over centuries, the unique flavors of Oaxaca have gained worldwide attention for their bold and spicy offerings.   The region that is now Oaxaca provided the first shipment of chocolate to European consumers shortly after the discovery of the new world. Chocolate had long been a popular ingredient in the local cuisine and continues to be incorporated in Oaxacan dishes today. The Food of the Gods Festival Tour in Oaxaca City takes place annually in October but is not being offered in 2008. The information below is from the 2007 tour. For a culinary experience in Oaxaca now, see La Casa de los Sabores. (Saturday - Saturday)

The Holiday Inn Oaxaca has heated outdoor pool and Jacuzzi, located 10 blocks from the square. The Hostal de La Noria is a restored 3-story colonial mansion located 2 blocks from the square (no elevator). Hotel Victoria is located on a hilltop with a beautiful view of the city. Has tennis courts and pool, 5 minutes by taxi from the square. The Camino Real is housed in a former convent with gardens, pool, fountains and colonial-style rooms. Located 4 blocks from the square in the city's historic center.

  • Cultural walking tour of Oaxaca's historic center. The tour gives you an overview of the many historic attractions and prepares the visitor for further exploration. $20/pp
  • Chocolate Making The first shipment of chocolate to Europe in 1502 came from Oaxaca. See the ago-old process of chocolate-making with Sra. Juana Aragon Limited attendance. $25/pp
  • Oaxacan Ice-cream and Exotic Fruit Tasting Hand made ice creams created from rose petals, prickly pear or pomegranate and with fruits like chico zapote, mango, papaya, and strawberries. $20/pp
  • Market Tour of the Benito Juárez Market. See chiles, spices, cheeses, fruits, flowers of Oaxaca, chocolate-making. $20/pp
  • Tour of Monte Albán Tour the spectacular hilltop Zapotec archaeological site, one of the most important sites in Mexico. $25/pp
  • Seminar on pre-Hispanic Herbs. Señora Banderas, from a village near Puerto Angel, speaks about pre-Hispanic and present uses of medicinal plants and herbs. $20/pp
  • A Walk in the Clouds. For avid hikers; visit the broad valleys and soaring mountains of the Sierra Norte. Walk into mixed pine-oak forests classified by the World Wildlife Fund as being the richest and most varied on earth. The hike takes place at approximately 10,000 feet above sea level. Includes lunch. $75/pp
  • Mitla/Tule/Mescal Tour. Visit the Mitla archeological site (Zapotec culture) known for its geometric mosaics. See the 2000-year old Tule tree. We will visit a Maguey plantation and taste the Mezcal made from the plant. $30/pp
  • Zapotec Weaving Village Tour A small group tour of the Zapotec weaving village of Teotítlan del Valle. The artisans are famous for their carpets. The weaving skills have been passed down through families for generations. You will see the plants the produce indigo blue dye and the nopal cactus where weavers cultivate cochinilla bugs to produce the red cochineal dye. There will be a spinning, dying and weaving demonstration and the opportunity to purchase some of the richly colored rugs produced here.
  • Visit the Craft Villages of San Bartolo Coyotepec, Ocotlán de Morelos, and San Martín Tilcajete. Oaxacan black pottery, exotic cutlery, wood carvings, market day, and more. Lunch outdoors at La Capilla included. $50/pp
  • Guelaguetza. Dinner and folkloric music and dance performance in a 16th century chapel at the Camino Real Hotel. $35/pp
  • Cooking Classes Classes are conducted by Iliana de la Vega, Reyna Mendoza, and Alejandro Ruiz $70/pp per class
  • Empanada Class with Sra. Juana Arragón. $45/pp
  • Salsa Class with Sra. Ofelia Banderas. Learn traditional ways of making authentic salsa from basic fresh ingredients. $35/pp

Reservations are required to be made at least two weeks in advance. Last minute bookings will be accepted based on availability of airline space and hotel space with a small late booking fee.
